It’s a short but sweet Friday recipe post. Beat the summer heat with this super tasty and healthy coconut blueberry popsicle smoothie bowl! It’s gluten-free and vegan too! Popsicles make me feel like a kid again. I still eat them. But, usually I try healthier ones than I ate when I was young.
Unlike regular popsicles, this version actually has health benefits! Some of the health benefits of this smoothie bowl include anti-aging properties, improved immunity, blood pressure, cholesterol, and stress reduction.
Coconut blueberry popsicle smoothie recipe
Ingredients
- 1/2 cup vanilla almond milk
- 1/2 cup light coconut milk
- 1 cup of frozen blueberries
- 1 scoop of vegan vanilla protein powder, I use Vega Sport
- Ice
Toppings
- 1 tablespoon coconut flakes
- 1/2 banana
- 1/4 cup cranberries
- 1/4 cup blueberries
- Flax seeds
- Optional: gluten-free rolled oats
Directions
Add all ingredients minus toppings into a blender and puree until smooth. Add toppings and serve cold.
