Chicken with Dijon Mustard and Curry

Chicken breast and salad with mixed greens

Makes: 4 servings
Total time: 40 minutes, cook time: 20-25 minutes, prep time: 10-15 minutes (if marinating the meat, add in sitting time for the marinade)


  • 4 chicken breasts, boneless and skinless

For sauce:

  •  Juice of 1 lemon
  • 1/4 cup of gluten-free chicken stock
  • 4 tablespoons dijon mustard
  • 1 tablespoon extra-virgin olive oil
  • 3 tablespoons curry powder
  • 3 tablespoons garlic chili sauce
  • 1/4 cup of strained tomatoes
  • 2 garlic cloves minced
  • Salt and pepper
  • Optional: 1 habanero, wiri wiri or scotch bonnet pepper

Whisk or blend dressing ingredients in blender and put on top of chicken. Marinate for a minimum of 2 hours. Bake on 350 degrees until cooked.
