    • Hi Karen! I have an intolerance to gluten and dairy, and I’m allergic to fish and shellfish. I eat vegan a couple times a week for digestive health. I have found it tremendously helpful. It took a couple of years to get to find a good recipe balance where the food tastes enjoyable. I track my food every day to make sure I am getting enough calories, protein, carbs and fat. It was easier to ease into it also because not all of these happened at the same time. Gluten-free products have gotten so much better since I had to stop eating it. I hope this information is helpful for you!
